What Freeze-Drying Does to Texture
Fresh food often contains a lot of water. During freeze-drying, the food is frozen and much of that water is removed as vapor without first becoming liquid. The process leaves tiny empty spaces where frozen water used to be, creating the porous structure that gives many freeze-dried foods their light, crisp texture.
You don't need to know any of that to enjoy a bag of freeze-dried cherries, of course.
You can hear the result.
A good piece breaks cleanly when you bite into it. There's a quick crackle, almost like dragging the edge of a butter knife across a crisp piece of toast.
Then comes the flavor.
And because so much of the water is gone, there's very little standing between your tastebuds and undiluted, intensified flavor.
Familiar Foods Become New Experiences
This might be our favorite part of freeze-drying.
It doesn't have to make food taste exactly like the fresh version to be worthwhile.
We talked about this recently with our freeze-dried Wisconsin cheese curds in other posts. Fresh cheese curds have earned their reputation for that soft, unmistakable squeak. We wouldn't want to replace that.
Freeze-drying takes the same familiar idea somewhere else.
Instead of the soft bite you expect from a traditional curd, you get a crisp crack followed by the intense flavor of deep, rich cheddar cheese. It's unmistakably cheese, but you're experiencing it from another direction.
Fruit can be just as surprising.
A fresh Montmorency cherry has juice, softness, and tartness all happening at once. Freeze-dry it and the softness disappears. What remains is a light crunch followed by that recognizable tart cherry flavor.
Neither version has to win.
Sometimes it's simply fun to experience a familiar food differently.
Crunch Can Tell You Something About Quality
Texture can also give you clues about how a freeze-dried product has been handled.
When you open a fresh bag, you generally want that characteristic crispness. If food that's supposed to be crunchy feels unexpectedly soft or chewy, moisture may have found its way back in.
That's because freeze-dried foods are very willing to absorb moisture from the air around them.
Think again about that open bag of potato chips on the counter. Leave it exposed long enough and the room eventually finds its way into the bag.
Freeze-dried food can behave in much the same way.
That's one reason proper storage matters after you've opened it.

Most people aren't sitting down and eating an entire bag of freeze-dried food at once.
You might grab some apples while you're heading out the door, pack a few cheese curds for a road trip, or pour some cherries into a bowl and put the rest back in the pantry. That's why our bags are resealable.
